Roasted Tomato, Zucchini & Cheddar Slice

Makes 6 portions 

The Tomatoes: 

  • 3 medium tomatoes, eye removed and halved 
  • 15ml (1 tbsp) olive oil 
  • 6 thyme sprigs 
  • Salt and pepper to season 
     

Instructions: 

Step 1. Place tomato halves cut side up on a small round baking tray. 

Step 2. Coat with olive oil, top with thyme leaves, and season. 

Step 3. Roast in the KILN on low with the under burner off (if using the KILN R Series) for 5 minutes or until just soft. 
 

The Onions: 

  • 2 brown onions, peeled and cut into 1 cm (0.4 in) slices 
  • 15 ml (1 tbsp) olive oil 
  • ½ tsp dried chili flakes 
  • 1 tsp cumin seeds 
  • Salt to taste 
     

Instructions: 

Step 1. Brush a small round oven tray with oil, top with chili flakes, cumin seeds, and salt. 

Step 2. Place onion slices on top, brush with spiced oil. 

Step 3. Cover with aluminum foil and roast in the KILN on low for 6 minutes or until brown and soft. Ensure turntable is switched on (- If using the KILN S Series ensure regular turning). Set aside. 
 

The Zucchini Slice (makes two trays): 

  • 6 eggs 
  • 140g (4.9 oz or about 1 cup) self-rising flour 
  • Salt and freshly ground black pepper to taste 
  • 500g (17.6 oz) zucchinis, cut into spirals or thin strips 
  • 1 cup frozen mixed greens, thawed 
  • 75g (2.6 oz) baby spinach leaves 
  • 100g (3.5 oz) smoked grated cheddar 
  • 80g (2.8 oz) crumbled feta 
  • 1 tsp salt 
  • 15ml (1 tbsp) olive oil 
     

Instructions: 

Step 1. Using a large bowl whisk eggs with flour, then add remaining ingredients and fold gently with your hands. 

Step 2. Brush the bottom and sides of a 240mm (9.4 in) diameter metal baking dish with olive oil, top with a disc of baking paper. 

Step 3. Place half the filling in the pan (it will make 2 dishes), pat down to level the top layer and top with roasted tomatoes, and cover with a layer of aluminum foil. 

Step 4. Place into the KILN set on low with the bottom burner off (if using the KILN R Series). Turn on the turntable and roast for 15 minutes or until the slice has puffed up and turns golden brown. (If using the KILN S Series ensure regular turning.) 
 

To Finish: 

  • 30 ml (2 tbsp) olive oil 
  • 4 sprigs of thyme 
     

Instructions: 

Step 1. Top with onion slices, a drizzle of olive oil, and thyme leaves.

*If using the KILN R Series, ensure you deactivate the rotating turntable when inserting and removing dish from the oven*

*If using the KILN S Series, ensure you regularly rotate the dish when cooking, to avoid burning it*
