Cape Grim Beef Burger With Roasted Onion And Cheddar

Makes 4 burgers.

The Patties

  • 600g / 1.3 lbs Coarse ground Cape Grim Beef chuck steak
  • 1 egg
  • ½ cup gluten free fresh coarse breadcrumbs
  • 1 tsp salt
  • 1 tsp ground black pepper

Step 1. Place an egg into a bowl and add in the breadcrumbs, ground beef, salt, and pepper. Lightly combine until just mixed and divide into 4 even beef patties.

Step 2. Make a slight 10mm deep indent with your thumb into the middle of each burger. This will ensure the burger cooks evenly, keeps its moisture, and stays flat.

 

The Grilled Onions

  • 2 red onions cut into 8x10mm (0.4 in) thick slices.
  • 30ml (2 tsp) olive oil

Step 1. Add the olive oil to a cast iron skillet pan.

Step 2. Place into the preheated KILN set on low with lower burner on. After 1 minute, remove and add the onion slices.

Step 3. Place into the KILN and grill for 2 minutes.

Step 4. Remove, turn the onions over and place back into the KILN. Remove after two minutes and set aside.

 

The Burgers

  • 4 slices cheddar cheese
  • 4 sesame topped brioche buns.
  • Butter to spread onto buns.
  • 8 tomato slices
  • ½ cup sliced pickles
  • 4 tbsp Heinz special Burger sauce
  • 8 lettuce leaves

Step 1. Place an oiled cast iron skillet pan into the KILN to preheat for 1 minute with lower burner on if using the KILN R Series.

Step 2. Remove and add in the beef patties and place back into the KILN. Grill for 2 minutes, remove and turn the patties over. Place back in and grill for two more minutes or until cooked and the core temperature reaches 60°C/140°F.

Step 3. Remove, top each with a slice of cheddar and place back into the KILN for 20 seconds to melt the cheese. Remove and set aside.

Step 4. Toast the buns on the cut side only, remove and butter the toasted surface.

Step 5. Place the bottom buns onto a plate. Top with the melted cheeseburger, tomato slices, grilled onions, sliced pickles, burger sauce and lettuce. Finish with the bun top and serve.

*If using the KILN R Series, ensure you deactivate the rotating turntable when inserting and removing dish from the oven*

*If using the KILN S Series, ensure you regularly rotate the dish when cooking, to avoid burning it*
