Chicken can be a bit bland and can dry out on a barbecue, so try thighs instead of breasts and add some interest with this quick marinade.

Ingredients
8 Whole Chicken Thighs boneless, excess fat removed
Marinade
6 Tbsp Olive Oil
1 Tbsp Lemon Juice fresh
2 Clove(s) Garlic peeled and crushed or sliced
1/2 Tsp Black pepper freshly ground
1/2 Tsp Nutmeg
1 Tbsp Fresh Thyme
1 Tbsp Fresh Parsley
1 Tbsp Fresh Rosemary
Directions
Combine all ingredients in a ceramic bowl or plastic bag and marinate for two hours in the fridge.
Return to room temperature and char grill for a few minutes each side until the juices run clear.
Serve with lemon wedges.
