Fillet
4 Fillet(s) Blue Eye Or other firm white fish fillets
1 Tbsp Fresh Rosemary Very finely chopped
2 Clove(s) Garlic Peeled and crushed
2 Tbsp Extra Virgin Olive Oil
2 Tbsp White Wine
1 Pinch(es) Black pepper
1 Pinch(es) Sea Salt
Dressing
6 Tbsp Extra Virgin Olive Oil
1 Tsp Lemon Peel Finely grated
1 Tbsp Capers Rinsed and chopped
1 Tsp Lemon juice
1 Tbsp Rosemary Finely chopped
1 Pinch(es) Black pepper
1 Pinch(es) Sea Salt
Directions
Mix oil, garlic, wine and rosemary, seasoning with salt and pepper. Pour over fish and marinate for only one hour.
Make the dressing by combining all ingredients and mixing thoroughly.
Drain the marinade from the fish and grill over high heat.
Serve with dressing spooned over fillets, with a green salad.
